Importance of Fructan

The are several advantages of using fructan over the commonly used table sweetener:

  • Low-calorie sweetener, 60% lower than sucrose
  • Prebiotic dietary fibers encourages growth of friendly bacteria such as Bifidus and Lactobacili which aids in our digestion
  • Conversion of fructans into acids by acidophilic microorganisms in our digestive tract inhibits growth of harmful bacteria such as Escherichia coli which is known to cause diarrhea and even death
  • Organic acids from fructans are absorbed by the bloodstream and helps lower cholesterol levels
  • It enhances calcium intake and fat replacers

Currently, production of fructans is very expensive. It is therefore not practical to use them as all-around sweeteners.

The demand for an efficient and effective method of fructan production using traditional crops is high. Aside from being a sweetener, fructans can also be used as a wash softener or in the development of biodegradable plastics. It can also serve as a substrate for ethanol or glycerol production.
